Restaurant reviews … with real teeth

In The Guardian, Jay Rayner provides the kind of review that you rarely see in your local newspaper (because it guarantees that the restaurant will never buy advertising from you again):

Cooking a steak well is tricky, because you cannot see inside the meat. It takes experience and knowledge. Cooking chips is easy: use the right potatoes, give them a couple of runs through the hot oil, make sure they’re the right colour, perhaps even taste a couple. The job is done. At Smith & Wollensky, the new London outpost of a well-known small American steakhouse chain, we sent back the chips because they were tepid and under-cooked. They returned to us hot and undercooked. And in that one example of carelessness and lack of attention to detail, you know all you need to.

But I had to sit through the whole damn meal so I don’t see why you shouldn’t, too. This US business has swaggered into London like it thinks it’s the bollocks. The description is almost right, if you remove the definite article before the reference to testicles. It is about as shoddy an operation in separating people from inexcusable amounts of their cash as I have seen in a very long time.

The menu also mentions a list of blackboard specials – T-bones and so on – all of which have run out by 8.20pm. We order the bone-in ribeye. The char is feeble and the overwhelming taste is of salt. Worse is the texture. It’s floppy. Part of this, I think, is a cultural difference; Americans like to celebrate steaks based on tenderness, as if being able to cut a piece of dead animal with a butter knife is an aspiration. I think that if you’re going to eat beef, you want to know it has come from an animal that has moved. This steak slips down like something that has spent its life chained to a radiator in the basement.

The sauces are dire. A béarnaise is an insult to the name, lacking any acidity or the anise burst of tarragon. An au poivre sauce is just a shot of hot demi-glace. A side salad is crisp and well dressed. We take comfort in it. Many other sides are priced for two which is a quick route to higher profit margins and greater food waste. The £9 battered onion rings are good; the £10 truffled mac and cheese is dry and tastes not at all of truffle. Those terrible chips come in the kind of mini-chip-fat-fryer-basket used at chain pubs.

Service is omnipresent. Twice we ask to keep our bread and side plates when they attempt to remove them. When a third waiter lunges in I finally admit defeat. Take them if you’re so bloody desperate. How hard is it to communicate a table’s wishes to the half dozen people working a corner of the floor, especially when a meal is going to cost more than £100 a head?

You could easily respond to this week’s restaurant with furious, spittle- flecked rage. You could rant about the posing-pouch stupidity of the meat – hanging cabinet that greets you as the lift doors open, and the frothing tanks of monstrous live Norwegian king crabs next to it, each 4ft across. You could bang on about the bizarre pricing structure, and the vertiginous nature of those prices; about the rough-hewn communal tables that are so wide you can’t sit opposite your dining companion because you wouldn’t be able to hear each other, and the long benches which make wearing a skirt a dodgy idea unless you’re desperate to flash the rest of the heavily male clientele. You could shake your fists and roll your eyes and still not be done.

I think this would be a mistake. Instead you should accept Beast as the most unintentionally funny restaurant to open in London in a very long time. It’s hilariously silly. The most appropriate response is to point and laugh. I don’t even think I’d advise you not to go. As long as you go with someone else’s money, because God knows you’ll need a lot of it. Got any friends who are, say, international drug barons? Excellent. They may be able to afford dinner. It’s worth going to see what the unmitigated male ego looks like, when expressed as a restaurant.

The corn-fed, dry-aged Nebraskan rib-eye, with a carbon footprint big enough to make a climate-change denier horny, is bloody marvellous: rich, deep, earthy, with that dense tang that comes with proper hanging. And at £100 a kilo it bloody well should be. At that price they should lead the damn animal into the restaurant and install it under the table so it can pleasure me while I eat.

QotD: Paul Cambon, French ambassador in London

The senior ambassadors developed an extraordinarily elevated sense of their own importance, especially if we measure it against the professional ethos of today’s ambassadors. Paul Cambon is a characteristic example: hr remarked in a letter of 1901 that the whole of French diplomatic history amounted to little more than a long list of attempts by agents abroad to achieve something in the face of resistance from Paris. When he disagreed with his official instructions from the capital, he not infrequently burned them. During a tense conversation with Justin de Selves, minister of foreign affairs from June 1911 until January 1912, Cambon somewhat tactlessly informed de Selves that he considered himself the minister’s equal. This claim looks less bizarre if we bear in mind that between 1898, when he became ambassador to London, and the summer of 1914, Cambon saw nine ministers enter and leave office — two of them did so twice. Cambon did not regard himself as a subordinate employee of the government, but as a servant of France whose expertise entitled him to a major role in the policy-making process.

Underpinning Cambon’s exalted sense of self was the belief — shared by many of the senior ambassadors — that one did not merely represent France, one personified it. Though he was ambassador in London from 1898 until 1920, Cambon spoke not a word of English. During his meetings with Edward Grey (who spoke no French), he insisted that every utterance be translated into French, including easily recognized words such as “yes”. He firmly believed — like many members of the French elite — that French was the only language capable of articulating rational thought and he objected to the foundation of French schools in Britain on the eccentric grounds that French people raised in Britain tended to end up mentally retarded.

From Baden, about which it need only be said that it is a pleasure resort singularly like other pleasure resorts of the same description, we started bicycling in earnest. We planned a ten days’ tour, which, while completing the Black Forest, should include a spin down the Donau-Thal, which for the twenty miles from Tuttlingen to Sigmaringen is, perhaps, the finest valley in Germany; the Danube stream here winding its narrow way past old-world unspoilt villages; past ancient monasteries, nestling in green pastures, where still the bare-footed and bare-headed friar, his rope girdle tight about his loins, shepherds, with crook in hand, his sheep upon the hill sides; through rocky woods; between sheer walls of cliff, whose every towering crag stands crowned with ruined fortress, church, or castle; together with a blick at the Vosges mountains, where half the population is bitterly pained if you speak to them in French, the other half being insulted when you address them in German, and the whole indignantly contemptuous at the first sound of English; a state of things that renders conversation with the stranger somewhat nervous work.

The Great Retreat of the Russians during the last weeks has shown one thing: Artillery is the key to success. More specifically, a new kind of artillery tactic called the artillery barrage which focuses shelling on one part of the front. August von Mackensen had actually stolen this approach from John French. The Entente tried to use it on the Western Front a few months earlier without the expected breakthrough.

A new and exciting (if you’re a lawyer) aspect of photography

As a casual photographer, I think very little about taking a photo of a building or landscape visible from the sidewalk or other public place. This casual attitude may become a relic of the past if EU regulators have their way, as Brian Micklethwait explains:

Basically, some EU-ers are talking about making it illegal to profit without permission by taking a photo, in public, of a publicly visible building or work of art, and then posting it on any “profitable” blog or website. The nasty small print being to the effect that the definition of “profitable” is very inclusive. For the time being, it would exclude my personal blog, because my blog has no income of any kind. But does Samizdata get any cash, however dribblesome, from any adverts, “sponsorships”, and so forth? If so, then me placing the above photo of the Shard at Samizdata might, any year now, become illegal, unless Samizdata has filled in a thousand forms begging the owners of the Shard, and for that matter of all the buildings that surround it, to allow this otherwise terrible violation of their property rights, or something.

“Might” because you never really know with the EU. At present this restriction applies in parts of the EU. It seems that a rather careless MEP tried to harmonise things by making the whole of the EU as relaxed about this sort of things as parts of it are now, parts that now include the UK. But, the EU being the EU, other EU-ers immediately responded by saying, no, the way to harmonise things is to make the entire EU more restrictive. Now the MEP who kicked all this off is fighting a defensive battle against the very restriction she provoked. Or, she is grandstanding about nothing, which is very possible.

Being pessimistic about all this, what if the restriction does spread? And how long, then, before the definition of “for profit” is expanded to include everything you do, because if it wasn’t profitable for you, why would you do it? At that point, even my little hobby blog would be in the cross hairs, if I ever dared to take and post further pictures of London’s big buildings.

Some better news for me is that if this scheme proceeds as far as it eventually might, my enormous archive of photographs of people taking photographs will maybe acquire a particular poignancy. It will become a record of a moment in social history, which arrived rather suddenly, and then vanished. Like smoking in public.

Charles Stross on vampires

On his blog, Charlie provides a crib sheet for his novel The Rhesus Chart including the all-too-common appearance of vampires in urban fiction:

Vampires: well, who hasn’t read enough vampire books or watched enough vampire movies to claim some expertise? Maybe I’m anomalous in having a low taste for urban fantasy, but while I’m writing a novel I can’t unwind by reading something similar to what I’m working on — so during my hard-SF phase in the 2000s I read far too much UF as a source of brain candy while writing books like Iron Sunrise or Saturn’s Children.

There are huge inconsistencies in the vampire mythology, largely because the idea of blood-sucking corpses (or the more abstract transferrable-curse-of-vampirisim) crops up in many different cultures. Northern European vampires seem to have their origins in primitive misapprehensions about the process of decay of bodies after death, and in the way contagious diseases spread through families living in close unhygienic conditions (such as tuberculosis). Religious trappings got layered on top early on, because religious beliefs are a way of making sense of the universe, especially its more inexplicable aspects: hence the holy water/crucifix allergy. So it occurred to me that given the Laundry Files universe as a setting, it ought to be possible to come up with an “origin story” for vampirism that fits the mythology sufficiently well to explain most of the core elements and that was consistent with the previously established motifs of supernatural brain parasitism. If instead of pure parasitism (the eaters in night, the K-syndrome parasites) we posit a commensal symbiote, or a parasite that uses the host to harvest food, you end up with something like the V-parasites — and indeed, this sort of parasitism is something we see in nature.

One of my beefs with the urban fantasy genre in general is that there’s a tendency for less thoughtful authors to absorb the eschatological trappings that have cohered around the monster myths they’re adopting without questioning them. (Holy water and vampires would be one example.) I wrote The Apocalypse Codex in large part as a response to this problem — to underline the fact that the Laundry Files universe is not driven by Christian religious eschatology (unless Cthulhu worship really is going mainstream). Another problem I have with many UF series is that they posit a hidden world of magic and monsters coexisting with our own … without any friction visible around the edges, even as vampires and demons rack up an impressive body count. The Rhesus Chart is part of my fix for this in the Laundry Files (although The Concrete Jungle makes some interesting observations about the true purpose of the Mass Observation programs of the 1930s to 1960s). Vampires are predators and predators are territorial. It’s also not a great leap of the imagination to postulate that if vampires exist and were identified as a problem in public, the scale of the response would rival that of the reaction to terrorism: mandatory naked noonday identity parades, police patrols with mirrors and stakes, and so on. So the first rule of vampire school is: vampires don’t exist … and if you see one, kill it and dispose of the evidence because it’s carelessness is a direct existential risk to your own survival.

The 1870-71 Franco-Prussian War “was nearly the death of French Riesling”

Paul Lewandowski on the non-military impact of the Franco-Prussian War:

The name “Franco-Prussian War of 1870” conjures few images in the popular consciousness. It is an obscure war that is easily overshadowed by the Napoleonic wars of a few generations earlier, and the First World War a couple generations later. However, fans of military history and wine aficionados should both be intimately familiar with the conflict that is considered the first “modern” war, and was nearly the death of French Riesling.

The balance of power established in Europe after Napoleon’s defeat in the early 1800s had begun to erode in 1870. The greatest threat to this order was the upstart principality of Prussia. This relatively small nation had forged its independence and thrust itself onto the world stage through martial prowess and total devotion to military readiness among its people. Nineteenth-century Prussia was in many ways the first “garrison state.” By the late 1860s, the crafty Chancellor Otto Von Bismarck had consolidated Prussia into the hegemon of northern Germany. Everyone in Europe recognized that Prussia was a rising European power. France meanwhile, was the aging colossus of the European order. It had been a global power for hundreds of years, sparring with the Hohenzollerns and Hapsburgs for power and control of the European continent. For France, the world was changing, and the stagnant nation failed to change with it.

Alsace produces almost exclusively white wines. Historically the primary varietals are Rieslings and Gewürztraminer, both of which are also produced in Germany. Alsatian wines distinguish themselves from their German counterparts by their intense dryness. While German wines traditionally retain some sugar following fermentation, Alsatian wines are produced with almost no residual sugars.

Riesling is considered a “top three” white wine, together with Chardonnay and Sauvignon Blanc. It is most commonly grown in Germany and Alsace, but it is also cultivated in the United States, Australia, and Eastern Europe. Gewürztraminer meanwhile, is a wine variety that got its name in Alsace, though the grape it is derived from, the Traminer, has a somewhat hazy origin. Traminer is uniquely suited to Alsace, as it is considered by winemakers to be among the more difficult varietals to cultivate. Growers regard Traminer as “fussy” about different soils, unproductive, disease-prone, sensitive to frost, unruly on the vine, and inconsistent in result. Before modern cultivation methods, Gewürztraminer was difficult to cultivate consistently outside of Alsace.

Given the region’s unique productivity, Germany sought to obtain Alsace in the Armistice of Versailles. Once they took control of the region (along with parts of Lorraine), Germany’s actions became puzzling. They outlawed the production of Rieslings and Gewürztraminer in Alsace. Instead, the government imported low-quality, high-volume grape varietals like Chasselas and Elbling. Why would Germany want to destroy the unique productive capacity of their newly acquired region?

Finding The Road to Wigan Pier

In the Dublin Review of Books, Enda O’Doherty reviews a recent work on George Orwell:

In early 1936 the publisher Victor Gollancz commissioned George Orwell to conduct an investigation into the plight of the unemployed in England’s industrial North, a project that led to the book The Road to Wigan Pier. Unemployment and hardship in Lancashire and Yorkshire were, on the face of it, not subjects that Orwell could have been expected to know that much about. True, he had written vividly about tramps and tramping, “spikes”, charity wards and common lodging houses, but he had little experience of England outside London and the home counties and few friends or acquaintances who were working class or came from a non-privileged background. His own sentimental education had been forged in the sleek landscapes of the Thames valley or, later, genteel Southwold on the Suffolk coast – the England inhabited by those he was to term “the lower-upper-middle-class”, the people who kept the country running and who, though they owned no land, still felt they were “landowners in the sight of God”.

If he did not have much relevant experience, what Orwell could offer his publisher were energy and passion, and a small but growing reputation as a young man with something to say. He also needed the money. Years later he told a friend that he would never have undertaken the trip north had it not been for the size of the advance Gollancz offered: £500, a rather large sum at the time for a writer still in his early thirties. As a man with not much taste for the high life, he reckoned he could survive for two years on that, and afford to get married.

Orwell’s account of his visit to Crippen’s mine in Bryn, near Wigan, a superb piece of journalistic writing, forms the second chapter of The Road to Wigan Pier and has also been anthologised separately as “Down the Mine”. The chapter focuses alternately on the miners who dig the coal and those who unthinkingly consume it, the latter portrayed primarily as the comfortable, even the decadent classes – as if coal was not burned too in redbrick terraced houses in working class towns. Here are the fillers, who shovel the freshly mined rocks onto a conveyor belt from a kneeling position, splendid, heroic creatures in spite of the cruelly demanding labour they are engaged in:

    They really do look like iron – hammered iron statues – under the smooth coat of coal dust which clings to them from head to foot. It is only when you see miners down the mine and naked that you realize what splendid men they are. Most of them are small … but nearly all of them have the most noble bodies; wide shoulders tapering to slender, supple waists, and small pronounced buttocks and sinewy thighs, with not an ounce of waste flesh anywhere.

Victor Gollancz, who might be said to have been “close to the thinking of the Communist Party of Great Britain”, was not entirely pleased by the book which Orwell submitted to him in December 1936 and for which he had paid so large an advance. Not a great deal of exception could be taken to the first part, which was a fairly straightforward account of conditions in the North. Indeed Gollancz at first proposed – though the suggestion was not accepted ‑ that this should be published on its own as a Left Book Club edition. Into the second part, however, Orwell had stuffed his analysis and his always plentiful opinions, many of them strongly expressed and often focusing on the kind of people who formed a large part of the readership of the Left Book Club. Here are the urban, middle class intellectual socialists:

    … the more-water-in-your-beer reformers of whom Shaw is the prototype, and the astute young social-literary climbers who are Communists now, as they will be Fascists five years hence, because it is all the go, and all that dreary tribe of highminded women and sandal-wearers and bearded fruit-juice drinkers who come flocking towards the smell of “progress” like bluebottles to a dead cat.

Famously, there is the attraction of socialist doctrine for “cranks”:

    One sometimes gets the impression that the mere words ‘Socialism’ and ‘Communism’ draw towards them with magnetic force every fruit-juice drinker, nudist, sandal-wearer, sex-maniac, Quaker, ‘Nature Cure’ quack, pacifist, and feminist in England.

And finally, rising to an apparent pitch of impotent frustration:

    If only the sandals and pistachio-coloured shirts could be put in a pile and burnt, and every vegetarian, teetotaller and creeping Jesus sent home to Welwyn Garden City to do his yoga exercises quietly.

Perhaps more than a little of this is tongue in cheek. One conclusion, however, can be tentatively drawn before moving on: at this stage of his life and intellectual development, Orwell preferred to portray socialism as chiefly a middle class fad and, while he was quite ready to idealise the working class “other” if it came to him in the right shape, he showed virtually no interest in working class politics or social organisation as they actually existed.

The real lessons of The Good Life

While I don’t think I ever saw an episode of the British sitcom The Good Life, I’ve read a fair bit about it in passing, as it is one of the mass media touchstones used by Dominic Sandbrook in his series of hefty tomes about British life from the 60s onwards. In short, a middle-aged couple bail on their middle-class lives and try to set up a self-sufficient lifestyle on their (fully paid-off) house in the suburbs. The interaction between the couple and their still-living-the-middle-class-life next-door neighbours provides much of the humour for the show. Based on that, I must heartily agree with David Thompson’s explanation of the show:

… Tom and Barbara’s experiment in “self-sufficiency” wasn’t particularly self-sufficient. They don’t prevail in the end, not on their own terms or in accord with their stated principles, and their inability to do so is the primary source of story lines. Practically every week the couple’s survival is dependent on the neighbours’ car, the neighbours’ chequebook, the neighbours’ unpaid labour, a convoluted favour of some kind. And of course they’re dependent on the “petty” bourgeois social infrastructure maintained by all those people who haven’t adopted a similarly perilous ‘ecological’ lifestyle. The Goods’ “non-greedy alternative” to bourgeois life is only remotely possible because of their own previous bourgeois habits — a paid-off mortgage, a comfortable low-crime neighbourhood with lots of nearby greenery, and well-heeled neighbours who are forever on tap when crises loom, i.e., weekly.

To seize on The Good Life as an affirmation of eco-noodling and a “non-greedy alternative” to modern life is therefore unconvincing, to say the least. The Goods only survive, and then just barely, because of their genuinely self-supporting neighbours — the use of Jerry’s car and chequebook being a running gag throughout. And insofar as the series has a feel-good tone, it has little to do with championing ‘green’ lifestyles or “self-sufficiency.” It’s much more about the fact that, despite Tom and Barbara’s dramas, bad choices and continual mooching, and despite Margo’s imperious snobbery, on which so much of the comedy hinges, the neighbours remain friends. If anything, the terribly bourgeois Margo and Jerry are the more plausible moral heroes, given all that they have to put up with and how often they, not Tom’s principles, save the day.

QotD: Don’t walk on the grass!

… in Germany most human faults and follies sink into comparative insignificance beside the enormity of walking on the grass. Nowhere, and under no circumstances, may you at any time in Germany walk on the grass. Grass in Germany is quite a fetish. To put your foot on German grass would be as great a sacrilege as to dance a hornpipe on a Mohammedan’s praying-mat. The very dogs respect German grass; no German dog would dream of putting a paw on it. If you see a dog scampering across the grass in Germany, you may know for certain that it is the dog of some unholy foreigner. In England, when we want to keep dogs out of places, we put up wire netting, six feet high, supported by buttresses, and defended on the top by spikes. In Germany, they put a notice-board in the middle of the place, “Hunden verboten,” and a dog that has German blood in its veins looks at that notice-board and walks away. In a German park I have seen a gardener step gingerly with felt boots on to grass-plot, and removing therefrom a beetle, place it gravely but firmly on the gravel; which done, he stood sternly watching the beetle, to see that it did not try to get back on the grass; and the beetle, looking utterly ashamed of itself, walked hurriedly down the gutter, and turned up the path marked “Ausgang.”

In German parks separate roads are devoted to the different orders of the community, and no one person, at peril of liberty and fortune, may go upon another person’s road. There are special paths for “wheel-riders” and special paths for “foot-goers,” avenues for “horse-riders,” roads for people in light vehicles, and roads for people in heavy vehicles; ways for children and for “alone ladies.” That no particular route has yet been set aside for bald-headed men or “new women” has always struck me as an omission.

In the Grosse Garten in Dresden I once came across an old lady, standing, helpless and bewildered, in the centre of seven tracks. Each was guarded by a threatening notice, warning everybody off it but the person for whom it was intended.

“I am sorry to trouble you,” said the old lady, on learning I could speak English and read German, “but would you mind telling me what I am and where I have to go?”

I inspected her carefully. I came to the conclusion that she was a “grown-up” and a “foot-goer,” and pointed out her path. She looked at it, and seemed disappointed.

“But I don’t want to go down there,” she said; “mayn’t I go this way?”

“Great heavens, no, madam!” I replied. “That path is reserved for children.”

“But I wouldn’t do them any harm,” said the old lady, with a smile. She did not look the sort of old lady who would have done them any harm.

“Madam,” I replied, “if it rested with me, I would trust you down that path, though my own first-born were at the other end; but I can only inform you of the laws of this country. For you, a full-grown woman, to venture down that path is to go to certain fine, if not imprisonment. There is your path, marked plainly — Nur für Fussgänger, and if you will follow my advice, you will hasten down it; you are not allowed to stand here and hesitate.”

“It doesn’t lead a bit in the direction I want to go,” said the old lady.

“It leads in the direction you ought to want to go,” I replied, and we parted.

In the German parks there are special seats labelled, “Only for grown-ups” (Nur für Erwachsene), and the German small boy, anxious to sit down, and reading that notice, passes by, and hunts for a seat on which children are permitted to rest; and there he seats himself, careful not to touch the woodwork with his muddy boots. Imagine a seat in Regent’s or St. James’s Park labelled “Only for grown-ups!” Every child for five miles round would be trying to get on that seat, and hauling other children off who were on. As for any “grown-up,” he would never be able to get within half a mile of that seat for the crowd. The German small boy, who has accidentally sat down on such without noticing, rises with a start when his error is pointed out to him, and goes away with down-cast head, brushing to the roots of his hair with shame and regret.

Not that the German child is neglected by a paternal Government. In German parks and public gardens special places (Spielplätze) are provided for him, each one supplied with a heap of sand. There he can play to his heart’s content at making mud pies and building sand castles. To the German child a pie made of any other mud than this would appear an immoral pie. It would give to him no satisfaction: his soul would revolt against it.

“That pie,” he would say to himself, “was not, as it should have been, made of Government mud specially set apart for the purpose; it was not manufactured in the place planned and maintained by the Government for the making of mud pies. It can bring no real blessing with it; it is a lawless pie.” And until his father had paid the proper fine, and he had received his proper licking, his conscience would continue to trouble him.

Two months after landing in Gallipoli the fight has become a trench warfare. In Mesopotamia British troops were losing the optimism, they had felt just a few weeks ago. The change of seasons brought more heat, turning the weather from bearable to excruciating. Heat became a deadly foe. While the German crown prince Wilhelm unsuccessfully tried to break through the Western front in the Ardennes, the Austro-German force managed to drive back the Russians in the East.

When you read unit accounts, whether it’s the actual unit after action reports or the published books, everyone talks about Tiger tanks. But in looking at it in both German records and US records, I’ve only found three instances in all the fighting from Normandy to 1945 where the US encountered Tigers. And by Tigers I mean Tiger 1, the type of tank we saw in the film [Fury]. I’m not talking King Tigers, the strange thing is that the US Army encountered King Tigers far more often than Tigers. That’s partly because there weren’t a lot of Tigers left by 1944, production ends in August 1944. There were not a lot of Tigers in Normandy, they were mostly in the British sector, the British saw a lot of Tigers. Part of the issue is that US tankers were notorious for identifying everything as a Tiger tank, everything from Stug III assault guns to Panzer IV and Panthers and Tigers.

There was one incident in August of 1944 where 3rd Armored division ran into three Tigers that were damaged and being pulled back on a train, they shot them up with an anti-aircraft half-track. And then there was a single Tiger company up in the Bulge that was involved in some fighting. And then there was one short set of instances in April 1945, right around the period of the film, where there was a small isolated Tiger unit that actually got engaged with one of the new US M26 Pershing tank units. They knocked out a Pershing and then in turn that Tiger was knocked out and the Pershing tanks knocked out another King Tiger over the following days. So I found three verifiable instances of Tigers encountering, or having skirmishes with US troops in 1944-45. So it was very uncommon. It definitely could have happened, there are certainly lots of gaps in the historical record both on the German side and the US side. I think the idea that the US encountered a lot of Tigers during WW2 is simply due to the tendency of the US troops to call all German tanks Tigers. It’s the same thing on the artillery side. Every time US troops are fired upon, it’s an 88, whether it’s a 75mm Pak 40 anti-tank gun, a real 88, a 105mm field howitzer, they were all called 88’s.
