Gluten-free food not the dietary silver bullet

With a celiac in the family, we’ve been very aware of all the ways the food industry uses gluten as a cheap filler (because we have to read ingredient lists very carefully). The recent boom in gluten-free products has been wonderful: we still read all the labels, but there are more products we can safely buy and use with confidence. But some folks buy the products thinking that gluten-free means guilt-free:

The notion that a gluten-free diet can help people lose weight or avoid carbohydrates is a myth. “Many packaged gluten-free products are even higher in carbs, sugar, fat and calories than their regular counterparts, and they tend to be lower in fiber, vitamins and iron,” says Shelley Case, a registered dietician on the medical advisory board of the Celiac Disease Foundation. “Gluten-free does not mean nutritious,” she notes.

Gluten, a protein in wheat, barley and rye, is not only a key ingredient in baked goods. It’s also used as a thickening agent in ketchup and ice cream. It helps ferment vinegar and alcoholic beverages. It’s even in lip gloss and envelope adhesives.

For people with celiac disease, ingesting even tiny amounts of gluten can set off an autoimmune reaction that flattens the finger-like villi lining the small intestine. The most common symptoms are bloating, gas, diarrhea and constipation, as well as early osteoporosis. The autoimmune reaction can also cause skin rashes, chronic fatigue, bone and joint pain, neurological problems, liver problems, diabetes, infertility in both men and women and cancers, including lymphoma. An estimated three million Americans have celiac disease — and the vast majority don’t know it because it can have no symptoms or mimic other diseases.

Separately, a smaller group of people have a specific allergy to wheat; exposure can lead to rashes, asthma and even anaphylactic shock.

A third category of people — as many as 20 million Americans — appear to be sensitive to gluten without having full-blown celiac disease. For them, symptoms may be less typical, involving depression, mental fogginess, mood swings and behavior changes. Much less is known about this group.

Champagne serving tip

Shereen Dindar warns us that even though common sense has been vindicated on this issue, we shouldn’t get too cocky:

We now have a scientific study to confirm the widely accepted ritual of pouring bubbly down the side of a flute before drinking it actually makes sense.

Scientists in France found that pouring bubbly in an angled way and chilling the beverage in advance is best for preserving its taste, fizz and aroma.

Gérard Liger-Belair and colleagues — who published their findings in the Journal of Agricultural and Food Chemistry — studied carbon dioxide loss in champagne that was poured straight down the middle of a glass, as well as, down the side of an angled glass. They found that pouring champagne down the side preserved up to twice as much carbon dioxide.

I’m not a big Champagne fan — I don’t mind sparkling wines, but generally there are better values in Spanish Cava than in French Champagne — but no matter what your preference in bubbly, do yourself a big favour and serve your sparkling wine in the right kind of glass. Don’t use the caterer’s special — what they laughingly call a Champagne glass is almost ideally suited to producing the worst the wine has to offer. Use a proper Champagne “flute”, a tall narrow glass that concentrates the aromas (and the bubbles), not a wide, flat glass that dissipates ’em quickly.

The search for the geekiest beer

Betsy Mason reports on the ongoing search for the Venn diagram showing the intersection of microbrewing and science geeks:

I’ve already proven the connection between beer and geologists, but the number of brews out there with awesomely geeky science names suggests that the beer-science link is even more primordial. After stumbling across a few of these, like Shale Ale (named for the Burgess Shale, a famously fossiliferous outcrop) and Homo Erectus (an IPA made by Walking Man Brewing), I decided the matter required further investigation.

With the help of my friends and Twitteronia, I tracked down a bunch more science-geek beers, and a few with super-geeky tech themes (this is Wired, after all). I managed to get seven of them into Wired HQ, because, let’s be honest, this was all just another elaborate excuse to make drinking beer part of my job.

Sadly, I couldn’t get my hands on some of the geekiest beers. A few were short runs for special occasions, like The Empire Strikes Back All-English IPA and Galileo’s Astronomical Ale (tagline: Theoretically the best beer in the universe), brewed by astronomy geek Ken Grossman of Sierra Nevada Brewing Company to celebrate the 400th anniversary of the telescope. And some are seasonal, like 21st Amendment’s Spring Tweet, a beer brewed for Twitter (which brings up the obvious question: Where’s Wired’s beer?)

Temporary aircraft security procedures

Apparently, asking the wrong question of aircraft personnel can get you booted off the plane — but not the next flight:

United Airlines ejected a loyal first class passenger from a recent plane flight because he asked if he would be getting dinner. At least, that’s his story. He may have been ejected because he’s the sort of security threat who claims he’s talking about food when he’s really talking about the police.

United takes such threats very seriously. At least for a few minutes.

The threat to the plane and its crew was so severe that United summoned the police and escorted him from the plane. Okay, if they thought he was a clear and present danger, they arrest him and charge him, yes?

No. He’s such a potentially dangerous character that they have an elite customer service agent met him coming off the flight to book him on the very next flight.

Invasion of the Giant Hogweed

As if the poison ivy, mosquito swarms, and other joys of the great outdoors weren’t enough, we’re now getting a new pest in the woods — Giant Hogweed:

A forestry official confirmed two new findings of giant hogweed last week in Renfrew County, west of Ottawa. It has previously been spotted in Newfoundland, New Brunswick, Quebec, southwestern Ontario, Alberta and British Columbia. About 50 plants were spotted in Toronto’s Don Valley two weeks ago.

Contact with the weed’s clear, watery sap can be very dangerous, Jeff Muzzi, Renfrew County’s forestry manager and weed inspector.

“What it does to you is pretty ugly,” said Mr. Muzzi. “It causes blisters. Large blisters and permanent scarring. What’s left over looks like a scar from a chemical burn or fire.”

Even a tiny trace of sap applied to the eye can singe the cornea, causing temporary or permanent blindness, he added. The chemicals in the sap, furocoumarins, are carcinogenic and teratogenic, meaning they can cause cancer and birth defects.

It lives up to the “giant” moniker as well: plants can reach 5-6 metres at full growth, with stems up to 10 cm and flower heads up to 75 cm in diameter.

The latest set of disruptions to Toronto traffic

Toronto’s traffic, recently noted as being the 2nd worst in the developed world, has had a string of one-off events recently to slow down our already sclerotic commutes:

Toronto, are you crying uncle yet?

First, the G20 Summit ground the downtown core to a halt, landing hundreds of people in jail and crippling all kinds of business.

And then came the Queen, laden with her dainty hats, her fancy BlackBerry, her 3D glasses and her entourage, stopping traffic wherever she goes. She brought with her the heat, the hot, hot heat so hot that even the sidewalks are sweating. And then a power outage plunged our beleaguered city into darkness.

And now: Bring on the Shriners.

Both the Queen and the Shriners will converge on Queen’s Park today, shutting down traffic all around the provincial legislature. More than 10,000 well-meaning men in their little red hats and teeny-weeny cars will parade down University Avenue at 1 p.m. Road closures are expected to last until 7 p.m., meaning they will still be in effect during the nightly commute.

Knowing that my usual parking lot would be inaccessible by the time I got downtown, I took the GO train in to Toronto’s Union Station. Last summer, when I took the train in, I just walked up University Avenue . . . which was swarming with Shriners today. I risked getting totally lost in the PATH underground system instead. Fortunately, I had a guide: I met my accountant walking into the Whitby GO station, so I just followed him up as far as Adelaide before venturing out into the muggy air. In the couple of blocks I walked north, I felt I was nearing the end of a marathon — I’m not a hot weather fan.

More swordwork today

As I expected, the larger turnout of fencers yesterday prevented me from repeating as high a finish as the last two tournaments, but there’s more happening today. The morning tournament was a double-elimination, but the afternoon was a much briefer single-elimination. At least with double-elimination, you can recover from a mistake (theoretically).

There’s a big SCA event literally down the street from us today, so I’m off to do some rapier fencing. The last two tournaments I entered went very well for me (first place and second place), even though they were more than a year apart. I doubt I’ll do so well today: lots more competition including folks I’ve never fought before. Still, it should be a lot of fun.

Marketing secrets revealed

An absolutely brilliant post at The Secret Diary of Steve Jobs tells you all about the reality of marketing:

It’s a pretty safe assumption that if you’re reading this blog, you’ve seen “The Matrix.” And you may or may not remember the scene where a kid explains to Neo that the trick to bending a spoon with your mind is simply to remember that, “There is no spoon.”

So it is with marketing. One thing I learned very early in life, thanks to intentional overuse of psychedelic drugs, is that there is no reality. As a guy at the commune once put it: “The reality is, there is no reality.”

So some guy says his iPhone 4 is having reception issues. I say there is no reception issue. Now it’s his reality against my reality. Which one of us is living in the real reality?

There’s a two-part answer: 1, there is no real reality, and 2, it doesn’t matter.

The only thing that matters is which reality our customers will choose to adopt as their own.

What I realized many years ago — and honestly, it still amazes me — is that most people are so unsure of themselves that they will think whatever we tell them to think.

So we tell people that this new phone is not just an incremental upgrade, but rather is the biggest breakthrough since the original iPhone in 2007. We say it’s incredible, amazing, awesome, mind-blowing, overwhelming, magical, revolutionary. We use these words over and over.

It’s all patently ridiculous, of course. But people believe it.

QotD: Children and parenting styles

If you enjoy reading with your children, wonderful. But if you skip the nightly book, you’re not stunting their intelligence, ruining their chances for college or dooming them to a dead-end job. The same goes for the other dilemmas that weigh on parents’ consciences. Watching television, playing sports, eating vegetables, living in the right neighborhood: Your choices have little effect on your kids’ development, so it’s OK to relax. In fact, relaxing is better for the whole family. Riding your kids “for their own good” rarely pays off, and it may hurt how your children feel about you.

Once parents stop overcharging themselves for every child, the next logical step is straight out of Econ 101: Buy more. When you raise your children the easy way, another child is more likely to pass the cost-benefit test. This doesn’t mean you should copy the Duggars with their 19 children; when prices fall, Econ 101 says “Buy more,” not “Buy dozens.” But whatever your priorities, the science of nature and nurture tilts the scales in favor of fertility.

As you weigh your options, don’t forget that the costs of kids are front-loaded, and the benefits are back-loaded. Babies are a lot of work even if you’re easy on yourself. But the older kids get, the more independent they become; eventually, you’ll want them to find time for you. So when weighing whether to have another child, you shouldn’t base your decision on how you feel after a few days — or months — of sleepless nights with a new baby. Focus on the big picture, consider the ideal number of children to have when you’re 30, 40, 60 and 80, and strike a happy medium. Remember: The more kids you have, the more grandkids you can expect. As an old saying goes, “If I had known grandchildren were this much fun I would have had them first.”

Hallmark gets attacked for “racist” message

Sometimes a company will innocently create a message that is completely misunderstood. Hallmark is having an attack of the “racist” accusers, based on someone mis-hearing the term “black hole” as “black whore”:

The bad news? Rather than stand up to this idiocy, Hallmark looked at its bottom line and figured a PR war with the NAACP wasn’t worth it. The card’s been yanked from the market. The good news? The clip’s destined to be a viral hit and big media outlets like FNC have already picked up the story. (A segment ran within the past hour or so.) I hope the outrageously outraged enjoy the widespread derision they’re going to draw for it. The best news? If this is what the L.A. NAACP now considers a priority for direct action, Los Angeles must be completely racism-free. Three cheers for progress.

Haute stoner cuisine

There are so many restaurants now that some of them can even specialize to serve tiny demographics . . . like “restaurants created specially for the tastes of the slightly stoned, slightly drunk chef after work.

Even preschool teachers unwind with a round of drinks now and then. But in professional kitchens, where the hours are long, the pace intense and the goal is to deliver pleasure, the need to blow off steam has long involved substances that are mind-altering and, often enough, illegal.

“Everybody smokes dope after work,” said Anthony Bourdain, the author and chef who made his name chronicling drugs and debauchery in professional kitchens. “People you would never imagine.”

So while it should not come as a surprise that some chefs get high, it’s less often noted that drug use in the kitchen can change the experience in the dining room.

In the 1980s, cocaine helped fuel the frenetic open kitchens and boisterous dining rooms that were the incubators of celebrity chef culture. Today, a small but influential band of cooks says both their chin-dripping, carbohydrate-heavy food and the accessible, feel-good mood in their dining rooms are influenced by the kind of herb that can get people arrested.
