The “secret” of Indian food

In an article in the Washington Post last year, Roberto Ferdman summarized the findings of a statistical study explaining why the flavours in Indian foods differ so much from other world cuisines:

Indian food, with its hodgepodge of ingredients and intoxicating aromas, is coveted around the world. The labor-intensive cuisine and its mix of spices is more often than not a revelation for those who sit down to eat it for the first time. Heavy doses of cardamom, cayenne, tamarind and other flavors can overwhelm an unfamiliar palate. Together, they help form the pillars of what tastes so good to so many people.

But behind the appeal of Indian food — what makes it so novel and so delicious — is also a stranger and subtler truth. In a large new analysis of more than 2,000 popular recipes, data scientists have discovered perhaps the key reason why Indian food tastes so unique: It does something radical with flavors, something very different from what we tend to do in the United States and the rest of Western culture. And it does it at the molecular level.

Chefs in the West like to make dishes with ingredients that have overlapping flavors. But not all cuisines adhere to the same rule. Many Asian cuisines have been shown to belie the trend by favoring dishes with ingredients that don’t overlap in flavor. And Indian food, in particular, is one of the most powerful counterexamples.

Researchers at the Indian Institute for Technology in Jodhpur crunched data on several thousand recipes from a popular online recipe site called TarlaDalal.com. They broke each dish down to its ingredients, and then compared how often and heavily ingredients share flavor compounds.

The answer? Not too often.

QotD: Learning when to walk away

… the point of my book is that failure is inevitable, so you’d better learn to deal with it as best you can. Don’t say “Failure is not an option” the way they do in movies, because I promise you, failure is always an option. Prepare for it. Learn from it. Move on.

The follow-up question I frequently got — and a completely fair one — is “OK, how do you know when it’s time to pack it in? ‘If at first you don’t succeed, try, try again’ only takes you so far, after all.”

In response, I ended up telling a story. It’s the story of a girl who was destined to be around 6’2″, a fact ascertained during her toddlerhood by the family doctor. (Apparently you can reasonably approximate adult height by measuring a little kid’s leg bones. Or maybe by looking at her 6’7″ dad.)

This little girl briefly wanted to be a gymnast. This was not in her destiny. So she settled on a new ambition. She wanted to be a jockey.

The girl grew very fast. By the time she was in fifth grade, she was over 5′ tall. By seventh grade, she had reached her full height. And it was just around this time that someone pointed out that she was already a foot too tall to be a jockey.

Should this girl — and yes, it was our very own Megan McArdle — have pluckily ignored the critics and the naysayers and dedicated herself to achieving her dream? To answer that, ask yourself another question: Should you try to dislodge a stuck lemon peel from the garbage disposal while it’s still running?

No, no, no. This can only end in disaster.

Sometimes what failure is telling you is “this doesn’t work” or “you don’t have what it takes.” Ignoring those messages is, in fact, how many of the folks I chronicled in my book turned a simple failure into a total disaster.

The Marginal Product of Labor

Politics, your social bubble, and you

Last week, Megan McArdle looked at the Hindenburg-crashing-into-the-Titanic-during-a-volcanic-eruption how so many people’s assessment of the US general election is so at variance with reality:

Call it “the big sort” or “demographic clusters” or whatever you like, it all comes down to the same thing: Even as Americans talk more and more about diversity, they are increasingly dividing themselves into like-minded bubbles where other people, with other experiences and viewpoints, almost never penetrate. This is the message of books by Charles Murray and Robert Frank, and indeed of our own social media feeds.

All of those articles on “how to talk to your family about politics this Thanksgiving” might as well be called “how to discuss politics on the one day a year when you find yourself in a group that has not been hand-curated to remove dissenting viewpoints.”

I don’t exclude myself from this. I live in one of the most rarefied bubbles on the planet, a community of policy-focused knowledge workers in which I practically qualify as a proletarian because I have spent years in jobs that did not involve writing about what other people have done or ought to do.

Even the socialists here in Washington are often notable for their lack of personal familiarity with their side in the class war. Outside of family circles, I almost never meet anyone who does not have a college degree and a 401(k), unless I’m buying something from them, or giving a talk at a university to people who are on their way to having a college degree and a 401(k).

Social media, of course, makes this problem worse. Even if we are not deliberately blocking people who disagree with us, Facebook curates our feeds so that we get more of the stuff we “like.” What do we “like”? People and posts that agree with us. Given that Facebook seems to be the top news source for millennials, and an increasingly important one even for folks who grew up skimming dead trees for information, that matters quite a lot.

QotD: Colonialism

There are Muslims in Israel for the same reason that there are Muslims in India. They are the remnants of a Muslim colonial regime that displaced and oppressed the indigenous non-Muslim population.

There are no serious historical arguments to be made against any of this.

The Muslim conquests and invasions are well-documented. The Muslim settlements fit every historical template of colonialism complete with importing a foreign population and social system that was imposed on the native population. Until they began losing wars to the indigenous Jewish population, the Muslim settlers were not ashamed of their colonial past, they gloried in it. Their historical legacy was based on seizing indigenous sites, appropriating them and renaming them after the new conquerors.

The only reason there’s a debate about the Temple Mount is because Caliph Omar conquered Jerusalem and ordered a mosque built on a holy Jewish site. The only reason there’s a debate about East Jerusalem is because invading Muslim armies seized half the city in 1948, bombed synagogues and ethnically cleansed the Jewish population to achieve an artificial Muslim settler majority.

The only Muslim claim to Jerusalem or to any other part of Israel is based purely on the enterprise of colonial violence. There is no Muslim claim to Israel based on anything other than colonialism, invasion and settlement.

Israel is littered with Omar mosques, including one built in the courtyard of the Church of the Holy Sepulchre, because Islam is a colonial entity whose mosques testify to their invasive origins by celebrating colonialism as their true religion. The faith of Islam is the sworn religion of the sword.

Islam is a religion of colonialism that spread through invasion, settlement and conquest. Its caliphs, from the original invaders, including Omar, to the current Caliph of ISIS, wielded and wield religious authority in the service of the Islamic colonial enterprise.

Allah is the patron deity of colonialism. Jihad is just colonialism in Arabic. Islamic theology is nothing but the manifest destiny of the Muslim conquest of the world, colonial settler enterprises dressed up in the filmy trappings of religion appropriated from the culture of conquered Jewish and Christian minorities. Muslim terrorism is a reactionary colonial response to the liberation movements of the indigenous Jewish population.

With the spring in Russia and the Caucasus came the thaws on the Eastern Front and all the way down to Mesopotamia. The soldiers had to adapt to survive let alone fight. The Battle of Verdun still rages on though the French are not moving more airplanes to the area to break the German air superiority.

Winston’s booze

Last January, Harry Wallop attempted to match Winston Churchill’s daily intake of whisky, Pol Roger champagne, brandy, and sundry other “refreshers”. He found it a challenge beyond his ready ability:

One thing is certain: his fondness for kickstarting the day with what he called “mouthwash” — a weak whisky and soda, which he would take from about 9.30 onwards and keep continually topped up. But the whisky (simple Johnnie Walker, no fancy malt) would only just cover the bottom of the tumbler; the bulk of the drink was soda.

It’s a rather delightful way to start the day, as I discover. Especially, when consumed in bed. Churchill would frequently spend all morning in his dressing gown, under the covers, surrounded by papers and secretaries. He would also happily have meetings while taking a hot bath — a habit I did not attempt to replicate.

Lunch was when the serious drinking began. A whole bottle of champagne was the norm, invariably Pol Roger, a brand Churchill drank from at least 1908. His attachment was cemented in 1944, after meeting Odette Pol-Roger (the grand dame of the champagne house) at the British ambassador’s home in Paris, where the 1928 vintage was served in celebration of the liberation of France. She ensured he was never afterwards short of supplies.

A bottle, however, was for Churchill nearly always a pint-sized one, a fairly common measure until it was phased out by champagne houses in the 1970s. He would often drink it out of a silver tankard, still served this way in some gentlemen’s clubs.

A modern politico drinking like this would already have the horrified attention of his or her M.D., but Sir Winston’s liver may have been the most superhuman part of him:

I then spent the rest of the afternoon (or what was left of it), drinking more whisky and sodas while attempting to write an article — a task I found increasingly difficult. When I returned to it the following day, I discovered it was barely literate with every other word misspelled.

After dressing for dinner (bombs raining down on London was no reason to let standards slip), Churchill would often have a sherry. A glass of Amontillado failed to sharpen my jaded appetite. Worse, I was rather dreading the second pint of champagne over dinner.

I am aware this sounds churlish, but it became progressively joyless to get through all those bubbles. By 9.30pm I was slumped in front of ‘Death in Paradise’, working out if the plot or yet another glass was going to finish me off.

Churchill, by 10pm, would have been moving onto either port or his favourite 90-year-old brandy and at least four hours of hard work.

QotD: Ideological warfare

Americans have never really understood ideological warfare. Our gut-level assumption is that everybody in the world really wants the same comfortable material success we have. We use “extremist” as a negative epithet. Even the few fanatics and revolutionary idealists we have, whatever their political flavor, expect everybody else to behave like a bourgeois.

We don’t expect ideas to matter — or, when they do, we expect them to matter only because people have been flipped into a vulnerable mode by repression or poverty. Thus all our divagation about the “root causes” of Islamic terrorism, as if the terrorists’ very clear and very ideological account of their own theory and motivations is somehow not to be believed.

By contrast, ideological and memetic warfare has been a favored tactic for all of America’s three great adversaries of the last hundred years — Nazis, Communists, and Islamists. All three put substantial effort into cultivating American proxies to influence U.S. domestic policy and foreign policy in favorable directions. Yes, the Nazis did this, through organizations like the “German-American Bund” that was outlawed when World War II went hot. Today, the Islamists are having some success at manipulating our politics through fairly transparent front organizations like the Council on American-Islamic Relations.

But it was the Soviet Union, in its day, that was the master of this game. They made dezinformatsiya (disinformation) a central weapon of their war against “the main adversary”, the U.S. They conducted memetic subversion against the U.S. on many levels at a scale that is only now becoming clear as historians burrow through their archives and ex-KGB officers sell their memoirs.

The Soviets had an entire “active measures” department devoted to churning out anti-American dezinformatsiya. A classic example is the rumor that AIDS was the result of research aimed at building a ‘race bomb’ that would selectively kill black people.

On a different level, in the 1930s members of CPUSA (the Communist Party of the USA) got instructions from Moscow to promote non-representational art so that the US’s public spaces would become arid and ugly.

Americans hearing that last one tend to laugh. But the Soviets, following the lead of Marxist theoreticians like Antonio Gramsci, took very seriously the idea that by blighting the U.S.’s intellectual and esthetic life, they could sap Americans’ will to resist Communist ideology and an eventual Communist takeover. The explicit goal was to erode the confidence of America’s ruling class and create an ideological vacuum to be filled by Marxism-Leninism.

Accordingly, the Soviet espionage apparat actually ran two different kinds of network: one of spies, and one of agents of influence. The agents of influence had the minor function of recruiting spies (as, for example, when Kim Philby was brought in by one of his tutors at Cambridge), but their major function was to spread dezinformatsiya, to launch memetic weapons that would damage and weaken the West.

QotD: The amazing (ancient) Greeks

I discovered the Greeks when I was eight, and I came across a copy of Roger Lancelyn-Green’s retelling of The Iliad. I was smitten at once. There was something so wonderfully grand, yet exotic, about the stories. I didn’t get very far with it, but I found a copy of Teach Yourself Greek in the local library and spent weeks puzzling over it. Over the next few years, I read my way through the whole of Greek and Roman mythology, and was drawn into the history of the whole ancient world.

When I was twelve, my classical leanings took me in a new, if wholly predictable, direction. The sexual revolution of the 70s hardly touched most South London schoolboys. The one sex education lesson I had was a joke. Porn was whatever I could see without my glasses in the swimming pool. So I taught myself Latin well enough to read the untranslated naughty bits in the Loeb editions of the classics. The librarians in Lewisham were very particular in those days about what they allowed on their shelves. They never questioned the prestige of the classics, or thought about what I was getting them to order in from other libraries. With help from Martial and Suetonius and Ausonius, among others, I’d soon worked out the mechanics of all penetrative sex, and flagellation and depilation and erotic dances; and I had a large enough fund of anecdotes and whole stories to keep my imagination at full burn all though puberty.

Then, as I grew older, I realised something else about the Greeks — something I’d always known without putting it into words. There’s no doubt that European civilisation, at least since the Renaissance, has outclassed every other. No one ever gathered facts like we do. No one reasoned from them more profoundly or with greater focus. No one approached us in exposing the forces of nature, and in turning them to human advantage. We are now four or five centuries into a curve of progress that keeps turning more steeply upwards. Yet our first steps were guided by others — the Greek, the Romans, the Arabs, and so forth. If we see further than they do, we stand on the backs of giants.

The Greeks had no one to guide them. Unless you want to make exaggerated claims about the Egyptians and Phoenicians, they began from nothing. Between about 600 and 300 BC, the Greeks of Athens and some of the cities of what is now the Turkish coast were easily the most remarkable people who ever lived. They gave us virtually all our philosophy, and the foundation of all our sciences. Their historians were the finest. Their poetry was second only to that of Homer — and it was they who put together all that we have of Homer. They gave us ideals of beauty, the fading of which has always been a warning sign of decadence; and they gave us the technical means of recording that beauty. Again, they had no examples to imitate. They did everything entirely by themselves. In a world that had always been at the midnight point of barbarism and superstition, they went off like a flashbulb; and everything good in our own world is part of their afterglow. Every renaissance and enlightenment we have had since then has begun with a rediscovery of the ancient Greeks. Modern chauvinists may argue whether England or France or Germany has given more to the world. In truth, none of us is fit to kiss the dust on which the ancient Greeks walked.

How can you stumble into their world, and not eventually be astonished by what the Greeks achieved? From the time I was eight, into early manhood, I felt wave after wave of adoration wash over me, each one more powerful than the last.

Suleiman the Magnificent – II: Master of the World – Extra History

Knowing that most of Europe is preoccupied with internal struggles, Suleiman launches his wars against Hungary and Rhodes while they’re cut off from outside reinforcements.

Suleiman wanted to erase the failures of his predecessor, and extend the Ottoman Empire into Europe…

The boy king of Hungary had given Suleiman the perfect pretext for war by killing his envoy, and he’d done it at a time when Hungary was especially isolated from the rest of the continent. The Holy Roman Empire and Papal States were being torn apart by the declarations of Martin Luther. Spain and France were busy fighting each other. Suleiman even ensured that Venice would stay out of the dispute by offering them a lucrative trade treaty with his empire. Though he felt certain of victory, he still studied every route and painstakingly worked out the logistics of moving his army. He would not risk failure through carelessness. Yet the siege from his cannons could not bring down the walls of Belgrade, so he turned to treachery: eventually, the Orthodox Serbian contingent in the city gave him access in order to escape the oppression of the Catholic Hungarians. Suleiman massacred the Hungarians, but honored his agreement with the Serbs and let them leave. Then he turned to Rhodes. He offered them a chance to surrender in advance, but they refused. The Knights of Rhodes were after all a sacred order, equal in discipline to his janissary forces. They fought hard, repulsing several attempts by the Turks to invade through collapsed walls and repeatedly refusing Suleiman’s offers to let them surrender. But at last they wore down and agreed to terms of truce. Suleiman allowed them to leave along with any Christian subjects who wished to go with them. It had taken him two years to complete his wars, but he had succeeded.

Creating a real Palestinian state

At Sultan Knish, Daniel Greenfield calls for the establishment of a true Palestinian state:

A Palestinian state has never existed during any period in human history. Let’s change that.

The United States has spent billions of dollars trying to create a Palestinian state. It’s time that we finally got our money’s worth.

We’ve been putting money in the broken Palestinian slot machine in the metaphorical Palestinian casino (the real one was shot up when terrorists turned it into a base) for decades. It’s time to finally get our Palestinian jackpot.

But to make it happen, we need to be realistic.

Forget the peace process. Forget negotiations. They’ve never worked before. They’re not going to now. And there’s nothing to negotiate anyway.

There are almost a million Jews living on territory claimed by the PLO. Removing them would be the single greatest act of ethnic cleansing against an indigenous population today. It would also be impossible. But the same people who insist that the United States, a country of 318 million, can’t deport 11 million illegal aliens, think that Israel will somehow deport 1/8th of its own population if they just chant loudly enough about “occupation” outside Jewish businesses in London or San Francisco.

Ethnically cleansing 8,000 Jews from Gaza/Gush Katif led to nationwide civil disobedience, riots and, eventually, the fall of a political party and three straight terms for Prime Minister Netanyahu. Now imagine trying to deport 800,000 people from their homes simply because they’re Jewish.

And it wouldn’t just be the Jews alone being rounded up into trucks, buses and maybe boxcars.

52 percent of Arabs in East Jerusalem would rather be Israeli citizens than live under the PLO. Are we support to deport 100,000 Arabs from Jerusalem to make way for this imaginary “Palestinian” state?

How much ethnic cleansing do we have to do to make the Islamic colonial fantasy of Palestine real? It’s not going to happen.

Let’s create a real Palestinian state instead. And I don’t mean the PLO’s President for Life Mahmoud Abbas going down to the UN to give another speech. Abbas is on his 11th year of a 4-year term. The US spent $4.5 billion promoting “Palestinian democracy” and the last PLO election was ten years ago.

QotD: The sexual and psychological plight of the “nice guy”

I want to actually go into basic, object-level Nice Guy territory and say there is something very wrong here.

Barry is possibly the most feminist man who has ever existed, palpably exudes respect for women, and this is well-known in every circle feminists frequent. He is reduced to apophatic complaints about how sad he is that he doesn’t think he’ll ever have a real romantic relationship.

Henry has four domestic violence charges against him by his four ex-wives and is cheating on his current wife with one of those ex-wives. And as soon as he gets out of the psychiatric hospital where he was committed for violent behavior against women and maybe serves the jail sentence he has pending for said behavior, he is going to find another girlfriend approximately instantaneously.

And this seems unfair. I don’t know how to put the basic insight behind niceguyhood any clearer than that. There are a lot of statistics backing up the point, but the statistics only corroborate the obvious intuitive insight that this seems unfair.

And suppose, in the depths of your Forever Alone misery, you make the mistake of asking why things are so unfair.

Well, then Jezebel says you are “a lonely dickwad who believes in a perverse social/sexual contract that promises access to women’s bodies”. XOJane says you are “an adult baby” who will “go into a school or a gym or another space heavily populated by women and open fire”. Feminspire just says you are “an arrogant, egotistical, selfish douche bag”.

And the manosphere says: “Excellent question, we’ve actually been wondering that ourselves, why don’t you come over here and sit down with us and hear some of our convincing-sounding answers, which, incidentally, will also help solve your personal problems?”

And feminists still insist the only reason anyone ever joins the manosphere is “distress of the privileged”!

I do not think men should be entitled to sex, I do not think women should be “blamed” for men not having sex, I do not think anyone owes sex to anyone else, I do not think women are idiots who don’t know what’s good for them, I do not think anybody has the right to take it into their own hands to “correct” this unsettling trend singlehandedly.

But when you deny everything and abuse anyone who brings it up, you cede this issue to people who sometimes do think all of these things. And then you have no right to be surprised when all the most frequently offered answers are super toxic.

There is a very simple reply to the question which is better than anything feminists are now doing. It is the answer I gave to my patient Dan: “Yeah, things are unfair. I can’t do anything about it, but I’m sorry for your pain. Here is a list of resources that might be able to help you.”

The traumata of warfare were certainly nothing new when World War 1 broke out. But the extreme and prolonged exposure to machine gun fire, artillery bombardments and trench warfare led to a new kind of psychological disorder: Shell Shock. Soldiers who were perfectly fine on the outside, were incapable of fighting or living a normal life anymore.

Richard Feynman’s shortcut for detecting pseudo-scientific bullshit

At Open Culture, Josh Jones discusses Richard Feynman’s suggestion for non-scientists to evaluate whether a claim is scientific or pseudo-scientific nonsense:

The problem of demarcation, or what is and what is not science, has occupied philosophers for some time, and the most famous answer comes from philosopher of science Karl Popper, who proposed his theory of “falsifiability” in 1963. According to Popper, an idea is scientific if it can conceivably be proven wrong. Although Popper’s strict definition of science has had its uses over the years, it has also come in for its share of criticism, since so much accepted science was falsified in its day (Newton’s gravitational theory, Bohr’s theory of the atom), and so much current theoretical science cannot be falsified (string theory, for example). Whatever the case, the problem for lay people remains. If a scientific theory is beyond our comprehension, it’s unlikely we’ll be able to see how it might be disproven.

Physicist and science communicator Richard Feynman came up with another criterion, one that applies directly to the non-scientist likely to be bamboozled by fancy terminology that sounds scientific. Simon Oxenham at Big Think points to the example of Deepak Chopra, who is “infamous for making profound sounding yet entirely meaningless statements by abusing scientific language.” (What Daniel Dennet calls “deepities.”) As a balm against such statements, Oxenham refers us to a speech Feynman gave in 1966 to a meeting of the National Science Teachers Association. Rather than asking lay people to confront scientific-sounding claims on their own terms, Feynman would have us translate them into ordinary language, thereby assuring that what the claim asserts is a logical concept, rather than just a collection of jargon.

The example Feynman gives comes from the most rudimentary source, a “first grade science textbook” which “begins in an unfortunate manner to teach science”: it shows its student a picture of a “windable toy dog,” then a picture of a real dog, then a motorbike. In each case the student is asked “What makes it move?” The answer, Feynman tells us “was in the teacher’s edition of the book… ‘energy makes it move.’” Few students would have intuited such an abstract concept, unless they had previously learned the word, which is all the lesson teaches them.
