At 4 minutes in he uses a plane rather than sandpaper on the newly cut end of the board. I would be afraid to take off too much material with a plane. Of course, I’m no good at this kind of thing.

The temptation is to use the plane too aggressively there, but he’s working from the outside toward the centre of the board and not doing full-length strokes, so that there’s no blow-out of the end grain. I’ve done this, but you’re right: it takes a steady and restrained hand to do it correctly.
