This recipe comes from <em>Modern Cookery<\/em> by Eliza Acton, who is understood to have been the first person to call it &#8220;Christmas Pudding&#8221;.<\/p>\n<p>Plan a visit to Mrs Crocombe&#8217;s kitchen: <a href=\"http:\/\/bit.ly\/2BtBzoO\" rel=\"noopener\" target=\"_blank\">http:\/\/bit.ly\/2BtBzoO<\/a> <\/p>\n<p>Discover the history of Christmas pudding: <a href=\"http:\/\/bit.ly\/2Bu2WyS\" rel=\"noopener\" target=\"_blank\">http:\/\/bit.ly\/2Bu2WyS<\/a><br \/>\n<!--more--><\/p>\n<p>INGREDIENTS<br \/>\n75g flour<br \/>\n75g breadcrumbs<br \/>\n150g suet<br \/>\n150g raisins<br \/>\n150g currants<br \/>\n100g chopped apple (roughly one large apple)<br \/>\n125g white sugar<br \/>\n50g candied peel<br \/>\n\u00bd tsp mixed spice<br \/>\nA pinch of salt<br \/>\n100ml brandy plus 50ml for serving<br \/>\n3 small eggs<\/p>\n<p>METHOD<br \/>\nBegin by adding all of the dry ingredients into a bowl and mixing them together by hand. <\/p>\n<p>Pour in 3 small eggs and 100ml of brandy before stirring again. <\/p>\n<p>Line your chosen mould with butter and fill it with the mixture using a wooden spoon, making sure that every bit of space is filled, especially the bottom of the mould. <\/p>\n<p>Cover the top with a wet, floured cloth and insert a fold in the material to allow space for the mixture to rise. <\/p>\n<p>To steam the pudding, place the filled mould in a saucepan of boiling water, ensuring that the water level is approximately half way up the mould. <\/p>\n<p>Steam for around 4 hours.
